Taco Salad


  • Leftover taco meat
  • shredded lettuce
  • 1 can drained and rinsed black beans
  • 1 tomato, diced
  • shredded cheese (optional)
  • fat-free sour cream or plain Greek yogurt (optional)


  1. Add black beans to taco meat and heat until heated through.
  2. Plate lettuce and top with meat mixture, diced tomato, and other optional ingredients.
