Simple Fratata


  • 3 eggs, beaten
  • 1 tbsp olive oil
  • 1/4 large onion, chopped
  • 1/2 tomato, chopped
  • 2/3 garlic cloves, minced
  • salt and pepper to taste
  • hot sauce to taste


  1. Heat olive oil in on oven-safe pan. Sauté the garlic, onions and tomato. When onions are translucent and tomatoes start to break down, pour the beaten eggs over the mixture and cook until eggs are halfway cooked through.
  2. Place the pan under the broiler to finish cooking.
*Note: Change it up by adding different veggies to the onions and garlic! Try broccoli, spinach, or mushrooms.
