Hearty Veggie Omelet

Ingredients

  • 4 large eggs
  • 1 cup onions
  • 1 cup bell peppers
  • 1/2 cup black olives
  • 1 cup mushrooms
  • 2 tbsp butter

Directions

  1. Dice all vegetables and set aside
  2. Beat eggs together until frothy.
  3. Melt butter in a skillet; sauté vegetables until slightly tender.
  4. Pour eggs over vegetables and cook until eggs are thoroughly done. Serve immediately.
