Breakfast Burritos


  • 2 eggs, 1/2 cup Egg Beaters, or 4 egg whites
  • cooking spray
  • chopped onion
  • chopped green pepper
  • salt and pepper to taste
  • 2 tbsp shredded cheese of choice
  • 2 tbsp salsa
  • 2 whole wheat tortillas


  1. Lightly coat pan with cooking spray. Sauté onions and peppers until almost tender.
  2. Add eggs and scramble until done. Season with salt and paper if desired.
  3. Spoon into tortillas. Add cheese and salsa; roll into burrito shape and enjoy!
